MUSHROOM CAPSICUM MASALA

                                                     I think its the best combo ever.........Mushrooms with capsicum....especially for rotis and fried rice its outstanding.But then please make sure capsicums have to be halfcooked , it shoud be crunchy so that you can know the difference.............

INGREDIENTS
Mushroom- 1 cup
bell pepper capsicum-1
onion- 2 medium
tomato-1 medium
ginger garlic paste- 1 tablespoon
green chilli-2
chilli powder-1 tablespoon
coriander powder-1 tablespoon
turmeric powder-1/2 teaspoon
garam masala-1/2 teaspoon
Oil-3 tablespoons
Salt- to taste

Seasoning
jeera-1 teaspoon.
fennel seeds-1 teaspoon
brinji leaf-1 finely crushed

Preparation
STEP1
          Add 1 teaspoon of oil in a pan once its hot add chopped capsicum and saute in low flame for 1 or 2 minutes and keep aside.
Add 1 teaspoon of oil in a pan.After it gets heated add the chopped onions and saute it until the raw smell vanishes. Remove it from the pan and allow it to cool and then grind to coarse paste. Similarly saute the chopped tomato and saute it until the raw smell vanishes. Remove it from the pan and keep aside to cool and then grind to coarse paste seperately.









STEP2
Add 2 tablespoons of oil in a pan add items given for seasoning. add grinded onion paste saute it. then add chilli powder and mix it for a couple of minutes. then add ginger-garlic paste mix it until you get a nice aroma of the masala(1 or 2 minutes) and then the tomato paste and cook it.now add the chopped mushrooms and cook for few minutes , no need to add water as mushroom as it cooks leaves water. as the water oozes out it means mushroom is cooked now add coriander powder and turmeric powder allow it to boil.if required add water.finally add capsicum referred in step1 and boil it just for 1 minute so that capsicums are half cooked. serve hot.


Tips
Capsicums if half cooked will give a nice flavour and taste. Those who dont like it can boil it completely.
