TOMATO RICE-2

  Whenever I get bored of usual rasam,sambar gravy varieties I end up with mixed rice varieties...Among them my most favourite is tomato rice,coconut milk rice.Each time I prepare tomato rice I try to make small variations and enjoy it.So today it was tomato rice with small variations and it was good,I can say
its the best version of tomato rice.So here is the receipe......


INGREDIENTS

Onion-1 Big
Tomato- 2 to 3 medium
basmati rice/rawrice-1  cup
mint leaves- 1 handful
coriander leaves-1 handful
green chilli- 3
garam masala-1 teaspoon
lime juice-2 tablespoon
salt-as required

For seasoning

Oil-2 tablespoon
ghee-1 tablespoon

PREPARATION

       Take a pan/cooker add the items in seasoning , saute well.after its done add onions fry it well until it turns golden brown and becomes one third in quantity.now add half the amount of mint and coriander leaves saute well until you get good aroma...Now add the tomatoes and little salt so that it smashes soon.Then add the chilly,ginger,garlic  paste and saute well till you get good flavour and oil seperates..Add the veggies,garam masala,salt mix well.Now add the rice,mint and coriander leaves,limejuice,ghee and water for the rice.Remove from pan/cooker once the rice is cooked.

Add oil saute onions,mint,coriander leaves till brown


Saute tomatoes till it turns mushy


Add ginger,garlic,green chilly paste,saute well


Add the veggies,mix well


Add garam masala,salt mix it

Add enough water,rice mix it

Add mint leaves,lime juice stir and close and steam it


so the rice is done
