PANEER KOFTA


First , let me admit that it needs both time and patience to make this gravy.But really worth the effort.I make this when I have enough time and carve for it.
Today we had it with Naan and it was like yummy yum.....







SERVES 4
PREPARATION TIME- 45 minutes

INGREDIENTS

FOR KOFTA BALLS
Boiled potato- 1
Grated Paneer-1 cup(150 gm)
kashmiri chilli powder-1 teaspoon
coriander powder-1/2 teaspoon
turmeric powder-1/2 teaspoon
jeera powder- 1 teaspoon
garam masala-1/2 teaspoon
kasoori methi-1 tablespoon
salt-as required

For gravy
Refined oil or Butter-5 to 6 tablespoons
Onion-2
tomato-1 small
tomato ketchup- 2 tablespoon
garlic-2 pods
ginger- 1 small piece
jeera powder- 1 teaspoon
garam masala-1/2 teaspoon
freshcream- 1 table spoon(optional)
kashmiri chilli powder-1 teaspoon
coriander powder-1 teaspoon
turmeric powder-1/2 teaspoon
shajeera-2  teaspoon
whole cashews - 10 / broken cashews-20
sugar-1 teaspoon
salt- as required

Preparation

FOR KOFTA BALLS

Take mashed potato add all spice powders,salt and mix well. Now take grated paneer and mix it well.The dough should be little stiff.Firsr droop one ball in oil , if it dissolves or extracts more oil you can add more mashed potato / bread crumbs/maida to make the batter stiff.drop balls in heated oil and take it once it turns slightly brown.

FOR GRAVY
         Pour some water in cashews and keep it aside for minimum of 15 minutes.Pour 3 tablespoon of oil/butter in a pan  and add  1 teaspoon shajeera, kasoori methi and let it splutter.Now add chopped onion and saute it well in low flame until you get brown colour.Please make sure you saute it very well that it turns from pink to brown so that you get a nice taste for gravy.Then add ginger garlic paste,. Now add turmeric powder then tomato puree and little salt and saute well and add kashmiri chilli powder,coriander powder,jeera powder,garam masala and saute for 2 minutes. Now grind cashews in to a smooth paste and add the grinded paste and allow cook it for 2 minutes .,Once it starts boiling add tomato ketchup(optional).Now add kofta balls to the gravy and cook for few minutes.Now add fresh cream,sugar to the gravy and serve hot.

Make balls and fry in oil

keep aside


Now the gravy,season with kasoori methi,shajeera


Add onions,turmeric saute it

Saute till brown


Add tomato puree , spice powders

Mix and wait till raw flavour leaves

Add in cashew paste,mix it

Add tomato ketchup,salt and sugar

Once it bubbles drop paneer balls

PANEER KOFTA is ready


NOTE
Add kofta balls to the gravy only while serving , otherwise it will become soggy.
