RASAM


                                     
        A simple and easy dish to prepare will not take more than 5 minutes to prepare is obviously rasam.Very good for digestion ideal food when having cold/fever.The rasam receipe i got
it from a brahmin lady while travelling in train from bangalore to chennai.We had a nice chat in train and i always feel that brahmin rasam/sambar are excellent receipes, so i asked her for the receipe.It was close to my moms preparation which used to be delicious , with small variations she did in rasam and powder preparation, the dish was extraordinary.So for the past few years this receipe is followed in my home.

INGREDIENTS
tomato-1 medium
tamarind- 1 small lemon size
turmeric powder-1 teaspoon
rasam powder-3 teaspoon
coriander leaves-few
salt- to taste
gingelly oil-1 tablespoon

For seasoning
mustard seeds-1 teaspoon
curry leaves-few
dry red chilli-3
slightly crushed garlic-3
                               

PREPARATION
Soak the tamarind in water about 15 minutes then extract the juice from it 3-4 times adding about small glass of water each time.Now the tamarind juice extract should be about three cups.now add rasam powder,turmeric powder and salt to tamarind water.also add add chopped tomatoes and crush it well.keep this aside.Pour oil in a pan add items given for seasoning.let it splutter and you should get nice aroma of garlic.Add this to the tamarind water and crush it well with hand in the tamarind water.You can check for taste now and add rasam powder or salt if required.if its too tangy/ripe taste add more water.keep in low flame closing the pan ,once you see the froth starts coming immediately switch off the stove.garnish with coriander leaves.


TIPS
1.Rasam should be  turned off immediately after it bubbles/froth.
2.Dont overcook rasam otherwise it will turn like kashayam.The froth is the sign to turn off.
3.rasam should be watery like a soup.

5.The rasam powder i mentioned is little hot, so you can reduce red chillies in seasoning as per your taste.
