MIXED VEGETABLE SAMBAR

This is my most favourite sambar among all sambars......Whenever I make this sambar I get remembered of my friends mom..........I learnt it through my friend.....You know the taste will be amazing....But please
make the sambar  thicker only then you will know the taste....







SERVES 6
PREPARATION TIME- 10-15 MINUTES
COOKING TIME 20 MINUTES


INGREDIENTS
Thoordal-3/4 cup
tamarind-medium lemonsize
onion-1 or pearl onion-10
tomato-1
mixed veggies-1 cup (beans,carrot,drumstick,broadbeans etc)
chilli powder-2 tablespoon
coriander powder-3 tablespoon
turmeric powder-1/4 teapoon
coriander leaves paste-3 tablespoon(just grind fresh coriander leaves)
asafoetida-a pinch

SEASONING
OIL-2 Tablespoons
mustard seeds-1/2 teaspoon
urud dal-1/2 teaspoon
fennel seeds-1/4 teaspoon
curry leaves-few

Add onions..

Mixed veggies,crushed garlic,tomato

Saute well,add spice powders,salt

Add tamarind water

Let it boil

Add dal,after 2 mnts add coriander paste


Leave 2 minutes and switch off the stove....



PREPARATION

STEP1
     Wash and soak tamarind with 1/2 cup of water...add a little salt so that it turns soft fast. Wash and soak thoor dal with enough water , turmeric powder, asafoetida and 1 teaspoon of oil in a pressure cooker.


STEP2
    Chop the onions first and add oil in a pan add the items in seasoning.Once it splutters, add the onions and saute it...while it gets cooked add the tomatoes and mixed veggies.....saute and leave  for 2 minutes...Meanwhile extract water from  tamarind 2-3 times so that you get about 2 cups of tamarind water.Once vegetables are sauted add the tamarind water , add chilli and coriander powder,salt and keep in medium flame for about 5-10  minutes.Add enough water if required.Now add the mashed dal cook it 2-3 minutes , now comes the special ingredient, the coriander paste,add before two minutes you switch off the stove.C lose it for 2 minutes,tasty sambar is ready..

Tips
  1.Add oil while boiling dal so that dal cooks fast.
  2. Dont add all tamarind water at first stage itself.... keep aside 1/2 cup of tamarind extract...after the dal is added check for taste , if required you can add remaining extract..
 3.please make the sambar thicker, and add ingredients as per instructions for the amazing taste....
