EGGLESS DRY FRUIT CAKE

Well, I tried this eggless fruit cake on new year eve.I was in a mood of baking and wanted to try something eggless...First I thought of plum cake but then I had no rum,butter and above all I wanted to try eggless.So I ended up with this, simple dry fruit cake.It turned out so soft and moist and was awesome.....
I forgot to take a snap while taking the cake from oven , sorry about that.....please try it and let me know...





INGREDIENTS
All Purpose flour-1 1/2cup
sugar-1 cup
oil-1/2 cup
vanilla essence- 1 tablespoon
yogurt-1 cup
warm milk-1/2 cup
baking soda-1/2 tablespoon
Baking powder-1/2 tablespoon
cocoa powder-2 tablespoon
mix of dry fruits-1 cup
salt- a pinch

 Sift all purpose flour,cocoa,baking soda,baking powder


In a bowl add curd,sugar,vanilla essence


Add oil and mix well


Mix

Add in sifted flour


Mix well


Add some warm milk,mix it


Take some dry fruits


chop and blend with maida


Add to the batter


Mix well

Oil and dust the pan with flour


pour in batter,keep it in preheated oven


Cake is ready

Sift the flour with baking powder,baking soda,cocoa powder and  keep it aside.Take curd in a bowl. Add sugar,Vanilla essence to the curd and mix well.Add oil at this stage and continue mix it.Mix in the sifted flour and gently fold with a spoon/spatula.Take chopped dry fruits in a bowl and mix with a tablespoon of flour so that the fruits dont settle at the bottom.Grease the baking pan and dust with flour.Pre heat the oven at 180 deg C and bake the cake for 75-80 mins.Insert a knife to cake to check if its done.Check to see if the knife inserted comes out clean.
