This is one of my very favourite kuzhambhu receipes.......I feel that this is awesome with aapam and dosas.......I learnt this receipe from my maami, who is from a village.....It can also be had with white rice.
INGREDIENTS (pls note teaspoon and table spoon differs in quantity)
Onion-1 big(half for grinding , half for sauting)
tomato-1 medium
chicken-1/2 kg
garlic-6pods
ginger-6 small pieces(equal to garlic quantity)
green chillies-2
Special masala powder- 4 tablespoons
salt-as required
Coconut Paste
coconut-4 tablespoons
fennel seeds-1/2 spoon
onion-1/2 of onion from onion quantity in ingredients
Split roasted gram(pottukadalai)- 2 teaspoons
For Seasoning
Cinnamon-2
Clove-2
marudhani mokku-1
brinji leaf(crushed)-1
fennel seeds-1/2 teaspoon
curry leaves-few
Special Masala Powder
(I used to grind this bulk in machine,but for trial you can use mixer grinder , make sure to form smooth powder for best taste)
(In a kadai/pan dry fry all these items, in the order below,fry jeera after switching off stove that heat is enough for jeera)
Coriander seeds-2.5 azhaku
Dry Red chillies-1 handful
Pepper-100 g
Fennel Seeds-50g
jeera-3 to 4 spoons
PREPARATION
Keep a cooker/pan add oil, prefarably sesame oil, add the items in seasoning and add onion, after it turns pink add tomato, ginger garlic paste , and saute well....after the ginger - garlic flavour comes, add chicken , and add the masala powder paste (just grind this masala powder in mixer once with water and make as a paste)...allow it to boil in low flame for 3 minutesnow add the coconut paste gravy add salt required and close the cooker/pan...and keep in medium flame and wait for 2 steams....gravy will be ready...
Dont get panic by seeing the ingredients , if you make the masala powder ready when you are free and store in a container , all other process are very simple like any other non-veg gravies)
Tips
Too much of ginger garlic paste/coconut will change the taste ...
After gravy is done , check for taste if needed masala powder can be added more and boiled for 3-4 minutes.
