KOVAKKAI STUFFED CURRY

Kovakkai-1/4 kg

for stuffing
 roasted peanuts powder-4 tablespoon
chilly powder-1 tablespoon
coriander powder-1 1/2tablespoon
jaggery/sugar-1 tablespoon
tamarind pulp-2 tablespoon
cumin powder-1 tablespoon

 
for seasoning
Oil- 3 tablespoon
Mustard seeds,cumin - 1 tablespoon
turmeric powder-1/4 teaspoon
 roasted peanuts powder-2 tablespoon
chilly powder-1/2 tablespoon
coriander powder-1 tablespoon
jaggery/sugar-1/2 tablespoon
tamarind pulp-1 tablespoon
cumin powder- 1/4  tablespoon
salt- to taste

PREPARATION
Wash and cut the edges of kovakkai slit it up to 70 percent lengthwise , donot cut totally...so that stuffing can be done.
Mix all the stuff ingredients and stuff it in kovakkai.Pour oil in a pressure cooker and all the items under seasoning. Now add the kovakkai and saute for 2 minutes.Add half cup of water in the vegetable.Pressure cook up to 2-3 whistles....serve hot with roti/rice.....
