AAMLA PICKLE(NELLIKAI OORUKAI)

                                               

                      A very tasty and healthy pickle , tangy and unique taste...My mom used to prepare this pickle...If kept in refrigerator can last for a week.

INGREDIENTS
Grated nellikai(aamla)-1 cup
salt-to taste

Dry powder
Dry red chillies-7 to 8
mustard seeds-1 tablespoon
fenugreek seeds-1/4 teaspoon
jeera-1 teaspoon

for seasoning

gingelly oil-5 tablespoon
mustard seeds-1/2 teaspoon
urud dal-1/2 teaspoon
asafoetida-a pinch


 PREPARATION
     fry the ingredients for dry powder in order given without oil... while adding jeera switch off stove.heat in pan is  enough for frying it.And once its done cool and grind it and keep aside....Add oil in a pan add the items in seasoning.Once it splutters, add the grated nellikai and saute well in low flame for 5 minutes.now add the dry powder saute well...close the pan and leave for 5 minutes.finally add the salt mix well for a minute and the pickle is done.

Tips for lasting 1 week
  for long lasting after washing the aamla clean it with dry clean towel.
  Dont use your hands in pickles , use a dry spoon
  keeping spoons in pickle and using wet spoons will spoil the pickle.
Gingelly oil is best for pickles.
