VADACURRY (VADAI CURRY)

                                                         
My favourite.................... dish....Wow what a superb match with idly/dosas........Its time consuming but for me it does nt matter ever..... :) . Love to the core.....


INGREDIENTS


For Seasoning
Cinnamon-3
Clove-3
fennel seeds-1 teaspoon
brinji leaf-2 crushed
curry leaves-few

For Gravy&Vadas
Onion-1 big
Tomato-1big
Ginger-small piece
garlic -4 pods
green chillies-3 
turmeric powder-1 teaspoon
chilly powder-1/2 teaspoon
coriander powder-1/2 teaspoon
channa dal-150 grams (washed and soaked in water about 3-4 hours)
fennel seeds-1 teaspoon




PREPARATION
Strain the water from channa dal and add garlic 2 pods and ginger little qty with fennel seeds and 1 green chilli and 1/2 quantity of salt required for channa dal and grind it in to a little coarse  paste.Deep fry in oil the channa dal paste and remove it when its half boiled.Now the vadas are ready lets move in to the gravy..add 4 tablespoons of oil in a pan and fry the items given in seasoning...Now add onions saute until it turns pink and add green chillies and ginger garlic paste and saute well for 2 minutes until you get the masala smell...now add turmeric powder, chopped  tomatoes and smash it and saute well...now add chilli and coriander powder and mix it and add enough water about 2 cups of water and allow this masala to boil well for five minutes until raw flavout goes off....Now add the fried vadas and slower the flame and allow the vadas to boil in the masala water for about 10 minutes closing the pan...Now vada curry is ready...
